Wash and trim your chicken breasts, and cut in half so you have two thinner breasts.
Peel and slice one green apple into thin slices, and pick a large handful of fresh basil leaves.
Spoon 1 tbs goats cheese on the thinner end of the chicken, and place some apple and basil on too. Fold the chicken over so the heavier end weighs down on the stufed end. Cook 15-20 until inside is no longer pink. Garnish with some more basil and apple.
Served here with mashed potatoes and a salad.
