Bacon Wrapped Chicken with Cayenne and Brown Sugar Glaze



Once again, I used fake bacon and I do apologize.


So really what we've got here is Chicken Breast, stuffed with goats cheese, wrapped in bacon with a sweet and spicy glaze. And it is goooood.

Trim and wash your chicken, and cut in half so you now have two thinner breasts. I ALWAYS do this with normal or large sized breasts, which allows for more meals.

Mix together about 3 Tbs brown sugar, and 1 large Tbs Cayenne pepper. Coat each chicken breast in the rub, all sides. Lay the chicken down and spoon about 1 Tbs goats cheese on the thinner end. Fold the thicker, heavier side over the thinner end, rub the bacon with the sugar-pepper rub, and wrap two slices of uncooked bacon around it all.
Cook in 350 oven until no longer pink inside, about 15-20 minutes.

I served mine with Potatoes Au Gratin and a salad...
