Jalapeno Cornbread and apple onion walnut salad
Okay, so I didnt save the recipe for the chicken. Which Sucks, cos it was amazing. I'll try to find it and post it later.
But Ze cornbread-
I bought a box of Jiffy Cornbread mix for .79 cents one day when I didnt know what else to do for a starch. My mom had made a cornbread stuffing once, and I loved the idea of using the bread as just a binder. We'll get to more of those recipes later.
The Cornbread is easy- buy a box of Jiffy mix and prepare as directed. To it, add one diced Jalapeno Pepper and cook as directed.
The salad was diced green apple, red onion slivers, crushed walnuts over mesclune greens with ceasar dressing, my favorite. I use it for everything.
