This recipe makes a lot, so half or quarter the recipe as needed. Its so good you might as well make it all!!!
1 lemon, thinly sliced

1 bay leaf
1/2 tsp black peppercorns
1/2 tsp thyme
3/4 tsp paprika (I used waaaay waaaay more)
1/3 c mayo
1/3 c sour cream
3/4 tsp salt
1/4 tsp black pepper
1/8 tsp nutmeg
3 c green grapes, cut in half
1 lg red bell pepper, diced in 1/2"
1/2 c fresh parsley
1/4 c thinly sliced red onion
1 lg jalapeno pepper, no seeds
6 meduim chicken breasts (1 3/4 lbs)
Poach chicken in water with sliced lemon, bay leaf, 1/4tsp thyme and peppercornsOnce cooled down, cut chicken into small cubes.
In a small pan, roast thyme and parika for 2 or 3 minutes.

Chicken Salad with Dill and Green Apple
Since this was my first try, I only kept records of the ingredients I used. All ingredients are to taste for however youd like.
Chicken. Yup, you need chicken for chicken salad. Shredded or cubed.
Celery, diced
Onion, diced
Fresh Dill, and lots of it.
Green Apple, diced
Mayo, lemon juice, salt, pepper, mustard seed.
Combine all, etc.
Served here in a warmed pita with cheese.
