Feta and Basil stuffed Chicken



Feta and Basil stuffed Chicken breast with mashed sweet potatoes with rosemary and brown sugar...and a salad




I made this one night when my friend Danny came over. Again, I wanted to do something special and I chose this since it didnt use many ingredients and is oh so good.




Cut your Chicken breasts in half, thereby making them half as thick. Each piece will have a thick end and a thin end, this is good. In a bowl, combine about 4 oz crumbled Feta and a good handfull of fresh basil leaves. A lil salt and pepper is always nice too. In aother bowl, crack an egg and season with S+P, while another bowl will hold some breadcrumbs and S+P. I like to season at every step when I'm working with chicken. Preheat your oven to 350.




Dip Chicken breasts in egg, then breadcrumbs. Lay your chicken down and put a good spoonfull of feta-basil mixture on the thinner end of the chicken. Fold thick end on top and place on pan. Etc. Etc. Cook for about 15 mins or till done. I still havent quite figured out prper times for chicken...just make sure the thickest part is no longer pink.




For the potatoes- wash 2 or 3 meduim sized sweet potatoes and boil. Mash em up with lots of butter, brown sugar, and some rosemary if you want.




The salad was red pepper and peaches over mesclune greens with balsamic vinaigrette.


The meal was great. All Danny said was 'I used to make this when I was in college." Gee thanks for the kudos.
