Chicken, Red pepper sauce

This was an attempt at something that didnt quite work....but I'm posting it cos it was still good.


If youve got a food processor this is a lot easier. As it was, I didnt know if my blender would work (which it did) so I diced everything up small incase I couldnt puree...


So cook your red and orange peppers, eggplant, yellow squash, spanish onion, garlic with oregano and basil. Once its cooked, put through food processor until smooth. Set aside, keep warm.

In some olive oil, cook chicken breasts with salt and pepper. In this picture, I served it with eggplant on top...If you want its alright, but not necessary. Serve Chicken over pasta, spoon Roasted red pepper sauce over all.
