So good! Fresh, light, and tastyyyy!
Marinate your chicken for at least one hour, though overnight is always good!
1/2 C Balsamic or raspberry vinegar
1/4 C Blackberry jam
2+ Tbs Dijon Mustard
1 tsp Sugar
Mix ingredients, set some aside for dresing and marinate chicken in the rest.
When ready, cook chicken under broiler for around 10 minutes, check the center for pinkness.
Serve over Mixed greens with onion slices, fresh blackberries, pear slices (or balls, if you have a melon baller), a slice or two of goats cheese, and the remainder of the dressing that DIDNT touch the chicken.
