Chicken Burgers and Oven Chips

Oh maaaaan these were good. Im actually making a version of these again tonight...

Chicken Burgers

So you start with your ground chicken. Half a pound with give you 4 huge burgers. Dice and sautee half a large red bell pepper and half a small white onion. Combine chicken, adding salt, black pepper, lots of fresh oregano, an egg yolk, and about 1/4 c breadcrumbs. Also add 1/2 tsp fennel seed, 1/2 tsp mustard seed, 1/4 tsp garlic powder.

Form into patties, then pull each patty apart so you have to halves. In the center of one half, place a small pile of your favorite cheese (I used Jarlsburg) and push two halves back together.

Over medium heat, sautee each patty in some olive oil so you have some good color, then put in oven for another few minutes until cooked through.

I served them on Sesame seed buns from Amys Bakery on ninth, with dill mayo, banana peppers, purple onion, mesclune greens with balsamic vinaigrette. Amazing!



Oven Chips

Slice Potatoes into thin rounds, toss with salt, pepper and olive oil to coat. Place in one layer on large baking sheet, in 350 oven until they reach the desired color of done-ness.

So I totally made another version for dinner tonight. And WOW.

So heres what I did.


Salisbury steak Style chicken burger


Youve got your ground chicken, 1/4 c diced roasted red pepper, 1/4 c diced purple onion, 2 tbs fresh thyme, 1/4 tsp fennel seed, 1/4 tsp mustard seed, 1/4 tsp garlic powder, and a dash of celery salt. Combine all ingredients and form into 4 small patties. Spoon goats cheese into center of two patties, then mush two halves together.





Sautee in some olive oil over medium high heat, then continue to cook in oven for 10ish minutes while you prepare your sauce.

The sauce is just this-

1 can chicken stock

1 Tbs fresh thyme

1 tsp cornstarch

1 Tbs butter

Combine stock thyme and cornstarch in a bowl and melt your butter in the pan you cooked your chicken burgers in. Once the sauce has gotten to a boil, add your patties. Simmer the patties in the sauce for about 10 minutes. Plate bugers on bread or plate and spoon sauce over.









Served with a salad! Amazing!
