Also, this is so totally not a normall pot pie...but it tastes good and costs $5...
Dice up 1 or 2 small potatoes and roast them in a 350 oven with some salt, pepper, and olive oil to coat. Toss them around once or twice during, until they get a light toasted gold all over.
Sautee one medium large chicken breast in olive oil and salt and pepper until cooked through. Once its cooled enough, shred it with two forks or your hands.
In your big pot, sautee your carrots onion and celery, about 1/3 cup each? Like usual, add more carrots you want if your crazy for carrots....this food is about what you like to eat!
Once your veggies are tender, add in your shredded chicken and pour in a bottle or can of your favorite beer!! Remember though, to use a beer you WOULD normally drink...you do have to like the taste....
Let your veggies and chicken simmer in the beer over medium heat while you make your crust.
The crust I made really didnt work out too well, but it did taste good.
Here is a better recipe-
Cheddar Biscuit Crust
2 c flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 tsp black pepper
1 c shredded cheddar cheese
1/4 c grated parm cheese
3/4 stick butter, ice cold
1 1/4 c buttermilk
Combine well and form into biscuits.
Add your potatoes and some fresh parsley to your chicken veggie beer mix and combine well. Put into oven safe pan and put your biscuits on top, cook in 350 oven about 10 minutes? Until biscuits are done.

Remember, I did a different crust....I did a variation on the cheddar biscuit crust but didnt make enough, and I glazed it with butter.
