Cream Pies

These pies are surprisingly easy to make! You probably have the ingredients in your kitchen already, just get a crust or make your own too!

Banana Cream Pie
Did you know there arent any bananas in a banana cream pie? Well, there are 4 in mine!!
3/4 c sugar
1/3 c flour
1/4 tsp salt
2 c milk
3 egg yolks
2 tbs butter
1 1/4 tsp vanilla extract
4 Bananas
2 tbs milk
Combine sugar flour salt and milk, bring to boil and stir for 5 minutes. Spoon a bit of the hot milk mixture into your egg yolks, this will keep the eggs from cooking once you add to the hot mix, its called tempering. Add your eggs and stir viciously over heat for another minute. Take off heat, add butter and vanilla.

In a blender or food processor, blend 3 or 4 bananas with enough milk to make it a liquid. Add this to your hot mixture, stir well, and pour into crust and refridgerate. It doesnt thicken up like other cream pies because of the additional bananas and milk, so I served it in a martini glass!



Chocolate Cream Pie Variations!
3/4 c sugar
1/3 c cornstarch or flour
2 squares of baking chocolate
1/2 tsp salt
2 1/2 c milk
3 egg yolks
1/2 tsp vanilla extract
Combine first 5 ingredients over high heat, stirring for 5 minutes. Temper your eggs and add to mix, stirring for another 2 minutes. Take off heat and add vanilla and any other flavorings....like.....

I added Peanut Butter here in my home made crust

Pastry Crust-
1 1/4 c flour
1/4 tsp salt
1/2 c cold butter chunks
3-4 tsp ice water
combine all ingredients, adding water until youve got a good dough, roll out into pie pan and cook for 1o minutes in 400 oven.


And I used Baileys instead of milk here! Served with fresh whipped cream, raspberries, and a shot of Baileys!

  2. GAH i deleted my own post... oops. ANYHOO your salads look incredible! I love the strawberry one... so good! I made Mac and cheese tonight with red onion and three different types of cheese... mont jack, parm, and cheddar all freshly grated. Way excellent, it's in the oven now I'll let you know how it turns out. Lots of love for Chef Ryder!
