I try to have a salad With every meal...otherwise, I have a salad For every meal.
Here are some ideas...
Strawberries and Feta Cheese over greens with balsamic vinairgrette.

Peach and red pepper over greens with balsamic vinaigrette.

Portobello Mushrooms over greens.
This was amazing...while your broiler is heating up, rub your mushroom with lots of olive oil. Cook under broiler until it is soft and tender looking, and easily pierced with a fork. Cut into triangles and place over a salad mixed with balsamic vinaigrette and fresh rosemary for a nice earthy salad.

If you cant get creative with ingredients, do something fun with presentation. This was my 'Circle Salad' with cucumber, radish, purple onion, squash, all over greens with your favorite dressing, sprinkly some chives on top.
Fresh and CrispyOnion, Green Apple, Red pepper over iceburg lettuce and oregano, serve with your favorite dressing.

Green Apple with Honey dressing
Cut up a green apple, toss with greens. Mix 1 tbs honey, 1 tbs olive oil, lemon juice and toss.

Red onion and Italian peppers
Served over mixed greens with balsamic vinaigrette. This one plays with sweet and hot flavors...
