.....and by that I mean get ready for a weird version.
Mashed New Potatos with Black Truffle Oil
Wash and dice 3-4 medium New Potatos and throw in a pot of salted boiling water. Boil for 20 minutes or until tender all the way through. Drain and mash with 1/4 c butter and 1/4 milk, adding salt and black pepper until youve got a taste and consistancy you like. Add 1 tsp Black Truffle Oil if you've got it...I've only used mine the once....
Creamed Spinach
So this kinda worked, kinda didnt work....It tasted great, and tasted like normal creamed spinach if youve had creamed spinach before. I hadnt, so It didnt work for me.
Defrost and drain well 10 oz frozen spinach.
Sautee 3-4 diced shallots and 5 minced cloves of garlic in olive oil over medium heat until soft and fragrant. Add your drained spinach, mixing well and heating through. Add 1 tbs butter and 1 cup heavy cream, mixing well to combine all the flavors. Simmer until the liquid has reduced a bit, stirring often.
Kielbasa with brown sugar and honey mustard

Over high heat, toast pieces of kielbasa about 6" long each. I like 'em BURNED, but whatever you like. In a small bowl, combine 1/4 c brown sugar with 1/3 c honey mustard. Cover the kielbasa with the mustard and serve.
