Chicken Chive and Herb Meatballs
All ingredients are to taste for however many people are eating.
Ground Chicken (one medium breast will serve one EASILY), chives, fresh herbs, salt, pepper, hot pepper.
Mix all together, for into balls, sautee in olive oil over high heat for 5 minutes each side, browning each side of the ball.
Lime Raita
1 c plain yogurt
1/2 c cucumbers, diced
1/4 c lime juice
1/2 tsp cayanne pepper
1/2 tsp paprika
1 tsp honey
salt
In a piece of cheesecloth, spoon yogurt in and drain out the liquid for 15-20 minutes. In a small bowl, pour a pinch of salt over cucumbers and sweat for 15-20. Drain the cucs of the liquid, combine other ingredients in bowl and mix well.
